Ingredients
- chicken thighs
- black beans

Steps
- Cook rice according to package directions while you prep everything else.
- Cut chicken thighs into bite-sized pieces and season with garlic powder, cumin, salt, and pepper.
- Heat a drizzle of oil in a large skillet over medium-high heat, add the chicken, and cook until no longer pink, about 7 to 8 minutes.
- Add broccoli florets and drained black beans to the same pan, stir everything together, and cook another 4 to 5 minutes until broccoli is tender-crisp.
- Serve over rice, top with shredded cheddar, and set out warm tortillas on the side.
Backup swap
If you're short on time, use a bag of frozen broccoli straight from the freezer — just add it to the pan frozen and give it an extra minute or two.
Leftover plan
Pack leftover chicken and bean mixture with rice into tortillas for easy grab-and-go wraps at lunch tomorrow.
